Seki City, Gifu Prefecture, is recognized as one of the world’s three major cutlery-producing regions, alongside Solingen, Germany, and Sheffield, UK.
The region was once the ideal location for bladesmithing due to its abundant natural resources: vast forests to fuel the fires, the pristine waters of the Nagara River, and high-quality clay essential for tempering Japanese swords. The origins of knifemaking here date back to the Kamakura period, when master swordsmiths chose Seki for its perfect environment.
The skill and spirit of these ancient craftsmen have been passed down through generations. Today, Seki’s knives continue to embody the legendary reputation of Japanese swords: “Unbreakable, unbendable, and extraordinarily sharp.”

At SUNCRAFT, we operate our own factory where we manufacture cutlery and kitchen tools daily. Among our products, the MOKA knife series stands out as a prime example of how we carry forward the traditions of Seki’s bladesmithing—a legacy dating back to the era of master swordsmiths.

A knife is the heart of every kitchen. That is why we want those who love cooking to have a high-quality tool they can cherish for a lifetime. MOKA was born from this vision, thoughtfully designed with countless innovations.
The blade is made of molybdenum vanadium steel, which is rust-resistant and ensures long-lasting sharpness.

Daily care is simple: just wash with detergent after use and dry thoroughly. The seamless, one-piece construction between the blade and handle prevents dirt from accumulating, making it exceptionally hygienic.
For the blade, we use molybdenum vanadium steel, which offers higher wear resistance than standard stainless steel. To maintain peak performance, we recommend re-sharpening with a whetstone once every one to two months, depending on how often it is used.
The handle is hollow, making it lightweight and comfortable to use.
While all-stainless steel knives can often be heavy, MOKA achieves a lightweight feel through its hollow handle design. The streamlined shape fits naturally in your hand, while the surface slits provide a secure, non-slip grip. For the handle, we use 18-8 stainless steel, which offers even higher rust resistance than standard stainless steel.
Damascus steel, admired for its long-lasting sharpness and beautiful rippled pattern.
Our lineup also includes Santoku and Petty knives made of Damascus steel, celebrated for their exceptional sharpness, long-lasting edge, and high rust resistance. The irregular rippled patterns that emerge on the surface are unique to each blade, meaning no two are exactly alike. These knives are highly recommended for culinary enthusiasts seeking both professional performance and true originality.

The Damascus steel used in the MOKA series features VG10 as its core material—a specialized cobalt-enriched stainless steel. VG10 is engineered for exceptional hardness and wear resistance, delivering both a razor-sharp edge and remarkable edge retention.
This multi-layered steel is crafted by cladding the VG10 core with alternating layers of soft and hard stainless steel, along with DP (Decarburization Prevention) layers. This intricate layering process creates the unique and beautiful Damascus pattern on the surface. Comprising the VG10 core, 33 layers of alternating steel on each side, and DP layers, this premium blade consists of 69 layers in total.

The MOKA series was designed by the world-renowned industrial designer Motomi Kawakami. Its simple and stylish yet warm, organic form has made it a favorite among a wide range of users, regardless of gender.

Motomi Kawakami (Born 1940) After completing his Master’s at Tokyo University of the Arts, he gained experience at the Angelo Mangiarotti office in Milan, Italy, before establishing Kawakami Design Room. His diverse portfolio spans crafts, product design, furniture, and environmental design. His excellence has been recognized with numerous prestigious awards, including the Mainichi Design Prize, the Kunii Kitaro Industrial Art Award, the JSCE Tanaka Award, the IF Design Award (Germany), and the Good Design Gold Award.

The MOKA knife series was honored with the “Director-General of the Small and Medium Enterprise Agency Award” at the 2008 Good Design Awards. Recognized for its superior manufacturing technology, it has been consistently selected as a “Hida-Mino Suguremono”—a mark of excellence for Gifu’s premier products. Furthermore, it proudly carries the “Seki no Hamono” (Seki Cutlery) certification, an official proof of authentic quality manufactured in Seki City, Gifu.
